A cuvée synonymous with excellence and persévérance
This cuvée, created essentially in out-standing vintages, is the result of a rigorous selection of our best Syrahs and Grenaches. With the unique objective of producing only quality wine, the watchword has been a return to basics by highlighting the nature of each plot in respect of the environment. Alain Graillot brought in agronomists Claude and Lydia Bourguignon, famous soil microbiologists, who studied the estate in depth plot by plot in order to prioritize the terroirs. Ageing is sublimated in oak casks from the Stockinger house for 12 to 14 months.
60% Grenache noir
Harvest at dawn, pre-fermentation cold fermentation (12°C) then alcoholic fermentation in temperature-controlled stainless steel tanks for 3 more weeks. Malolactic fermentation and ageing in 30 hL Austrian oak casks from Stockinger. Blending and bottling after one year of ageing.
The deep garnet color is of good intensity, with purple-pink hues and a beautiful brilliance. The complex nose opens on generous notes of scrubland and macerated red and black fruits as well as notes of ageing, frankincense and vanilla. On the palate, the texture is tasty and silky, with a hint of forest fruits. The lenghty finish is underlined by well integrated tannins.

A rack of lamb with chanterelles accompanied by gnocchi ’à la romaine’. Aiguillettes of duck and button mushrooms flavoured with thyme flower.
