Harvest at dawn, cold pre-fermentation at 12°C then alcoholic fermentation in thermoregulated stainless steel tanks for 3 weeks, followed by a malolactic fermentation in 3000-litre Stockinger casks (Austrian oak). Ageing for 12 to 14 months. Blending and bottling at the beginning of the following year.
Beautiful, sparkling ruby color with purple reflections.
Expressive nose of black fruit and fresh red fruit, enhanced by discreet floral notes.
On the palate, the attack is frank, supple and gourmet, revealing notes of prune and blackberry.
On the finish, the tannins are soft and smooth.

Veal grenadin with red onion sauce and pommes duchesse.
Lentil salad with blackberries and prunes.
Mature cheeses: Ossau-Iraty / Cantal.
