Harvest at dawn, cold pre-fermentation at 12°C then alcoholic fermentation in thermoregulated stainless steel tanks for 3 weeks, followed by a malolactic fermentation in 3000-litre Stockinger casks (Austrian oak). Ageing for 12 to 14 months. Blending and bottling at the beginning of the following year.
Beautiful garnet color. Nose combining undergrowth, leather and fruits of the woods such as blackberry and blackcurrant.
Ample and silky palate with notes of scrubland.
Pleasant finesse of the tannins.
Fresh finish with aromas of ripe cherry.

Rillettes of rooster and poultry livers.
Beef flank steak, blueberry chutney and rosemary roasted potatoes. Coral lentil cake with walnuts.
Fresh figs poached in red wine.
