5% Grenache noir

Winemaking

The grapes are harvested at dawn to preserve freshness and color.
A light direct pressing is carried out with a pneumatic press and the settling is done at 12°C.
Vinification takes place in thermo- regulated stainless steel tanks for 3 weeks minimum.
Bottling takes place in January.

Tasting notes

Beautiful salmon color with silverreflections.
The nose reveals citrus aromas such as pink grapefruit.
In the mouth, the attack is frank and reveals notes of tangy red fruits such as redcurrant.
Beautiful continuity of the aromas, the whole contained in a balance of freshness and finesse persisting at the end of mouth.

Wine and food pairings

Ideal for the aperitif, alone or with a ceviche of salmon marinated in pink grapefruit.
Zucchini flower fritters with basil.
Whole roasted sea bream with fennel and zucchini tagliatelle, topped with a drizzle of olive oil from La Cavale.
Amarena cherry clafoutis.
