57% Rolle
23% Grenache blanc
20% Clairette / Ugni blanc

Winemaking:

The grapes are harvested at dawn to preserve freshness and color. A light direct pressing is carried out with a pneumatic press and the settling is done at 12°C.
Vinification takes place in temperature- controlled stainless steel tanks for 3 weeks minimum.
Bottling takes place in January.

Tasting notes:

The pale gold color is intense.
The nose reveals notes of candied citrus fruit.
The attack on the palate is frank, underlined by freshness, gives way to aromas of white-fleshed fruit
The mineral finish gives it a nice lenght.

Wine and food pairings:

Seafood platter (oysters, crab, whelks).
Zucchini and lemon confit tart.
Salmon steak marinated in yuzu and ginger.
Kiwi and almond milk clafoutis.
