42% Grenache blanc
40% Ugni blanc / Clairette
The grapes are harvested at dawn to preserve freshness and color. A light direct pressing is carried out with a pneumatic press and the settling is done at 12°C.
Vinification takes place in temperature- controlled stainless steel tanks for 3 weeks minimum.
Bottling takes place in January.
The colour presents crystalline reflections. The nose opens on notes of pear, peach and lemon.
In the mouth, the forthright attack is marked by its amplitude and vivacity; it evolves towards notes of apricot.
The finish is long and expresses a beautiful complexity.
Wine and food pairings:
Seafood platter (oysters, crabs, whelks).
Hake fillet, lemon and dill sauce.
Lemon meringue tart and, of course, ideal as an aperitif to whet your palate.
