47% Ugni blanc / Clairette
29% Grenache blanc
24% Vermentino

Winemaking:

The grapes are harvested at dawn to preserve freshness and color. A light direct pressing is carried out with a pneumatic press and the settling is done at 12°C.
Vinification takes place in temperature- controlled stainless steel tanks for 3 weeks minimum.
Bottling takes place in January.

Tasting notes:

Beautiful color with golden reflections.
The nose reveals notes of white fruits and citrus fruits.
The attack in mouth is forthright and ample underlined by a pleasant freshness, which reveals notes of fresh nuts and pear.
The mineral finish gives it a nice length.

Wine and food pairings:

Seafood platter (oysters, crabs, whelks).
Spinach and ricotta cake.
Roasted cod with carrots and spelt risotto.
Citrus salad with honey and orange blossom, and of course, ideal as an aperitif to whet your palate.
