Harvest at dawn, quick fermentation in thermoregulated stainless steel tanks for 12 to 14 days only to bring forth the fruit. Malolactic fermentation and ageing in stainless steel tanks.
Bottling in March, ageing in bottles.
The color is ruby red, and the nose reveals fruit paste, raspberry and morello cherry aromas. On the palate, the first impression is frank, dense and well balanced. A refreshing finish leaves notes of Cubeb pepper, enhanced by silky tannins.
