Blend:

50% Grenache blanc
30% Rolle
20% Clairette / Ugni blanc

Winemaking:

The grapes are harvested at dawn to preserve freshness and color.
Direct pressing is carried out with in a pneumatic press, then settling at 12°C.
Vinification takes place in temperature-controlled stainless steel tanks for 3 weeks minimum.
Bottling takes place in March.

Tasting notes:

Intense pale gold color.
The nose is refined, carried by delicate aromas of Williams pear and candied lemon.
On the palate, the attack is supple and light, with subtle notes of white-fleshed fruit.
The finish is clean and fresh, revealing a beautiful balance.

Wine and food pairings:

Seafood platter (oysters, crab, whelks).
Jerusalem artichoke ravioli, aged Parmesan foam.
Roasted John Dory, burnt butter, parsnip mousseline, and citrus jelly.
Almond dacquoise biscuit, pear compote and lemon cream.
